Orange Mocha Brownies

Ingredients :

1 1/2 cups plain flour ~ sifted
1/2 cups cocoa powder
1 tablespoon coffee powder
1 cup castor sugar
250g margarine ~ thawed
4 eggs ~ lightly beaten
1 tablespoon vanilla essence
1/2 cup orange juice (I mix the Sunquick with water)
3/4 cup of chocolate chips

Method :

1. In a bowl mix all ingredients except orange juice and choc chips. Beat using mixer at medium speed until well combined.
2. Chuck in orange juice. Mix again.
3. Stir in chocolate chips.
4. Pour into baking tray, pre-lined with baking paper overhanging from both sides.
5. Bake for about 25mins at 170 C.
6. Remove from oven, leave in tin for 5 minutes and take out to cool on wire rack.
7. Pour and scrape chocolate frosting evenly on surface. Cut into squares.

Frosting :

200g dark chocolate bar
1/4 cup whip cream
1 tablespoon coffee powder

* Combine all in a casserole and microwave for 1 minute on HIGH. Take out and stir well until you get a lovely chocolate frosting. Or just double-boil over medium heat.
