Sumber : The Cupcake Book by Susanna Tee (makes 12 cupcakes)
1 1/4 tsp baking powder
1/4 tsp bikarbonat soda
2 ripe banana
115g butter, softened
1/2 tsp vanila extract
1/4 cup sour cream
For the frosting
3 cups confectioners sugar
1. Preheat the oven 190 celcius. Sift together the flour, baking powder and bikarbonat soda. Mash the banana.
2. Beat together the butter and sugar and vanilla extract until light and fluffy. Gradually beat in the egg then stir in the mashed bananas and sour cream. Fold in the flour mixture.
3. Fill half of each paper cupcakes and bake for about 25 minutes until risen firm to touch, and golden brown. Leave in the pans for 10 minutes, then transfer to a wire rack to cold completely.
4. For frosting, beat all the ingredients until light and fluffy. Spread the frosting on each cupcake, using star nozzle.
