Jejari Ketam Pizza Bun



400g high protein flour

11g instant yeast

1/2 tsp salt

30g caster sugar

30g milk powder

300ml milk

1/2 tbsp pizza seasoning

1 tsp bread improver

50 g butter

Topping

3 tbsp tomato sauce

1 tbsp oregano whole

12 stalks filament stick

some coriander leaves

3 tbsp mayonnaise

1. Combine all ingredients in a mixer, mix well with medium speed until to be a dough.

2. Add in butter, continue beat with medium speed until a smooth and elastic dough is formed. Rest the dough for 30 minutes.

3. Divide dough into 50g each portion and roll into round sgapes. Rest for another 10 minutes.

4. Roll out the dough into cylinder shapes with a rolling pin, make a few slits in the centre. Turn out the dough from inside to form a knot, spread with some tomato sauce and sprinkle with a little oregano whole.

5. Place in filament stick, leave to rise until doubled in size.

6. Bake in preheated oven at 200C for 10-15 minutes until cooked. Leave to cool, drizzled with some mayonnaise and top with coriander leaf.
